I woke up at 2pm because it’s Saturday and it was awesome. No one was around but me, so brunch with Brian it was! I was feeling eggs so I took out some red onion and feta to start my creation. First, I chopped the onions and sautéed them in a pan. After that, my intention was to whisk the eggs to make an omlete or scrambled eggs but that never happened and it was the best mistake ever.
Instead of actually whisking the eggs I cracked into a bowl, I prematurely poured the eggs in the pan. Oops? It was too late and there was no turning back now. My first thought was that I’ve messed it up and my breakfast is now going to suck but clearly Brian would never let that happen. I proceeded to crumble feta on top of the eggs and just fry the eggs instead (aka wing it) and it came out phenomenal!
Point of the story is that as long as you are using quality fresh ingredients with great flavors, the mindset that you can always solve any problem, and you appreciate that you might learn something new, everything will work out just fine. :D
