GRILLED CHEESE WITH SLICED FRUIT

Ingredients

  • Fruit: Peaches & Apples
  • Fresh Sourdough Bread
  • Cheese: Sharp Cheddar & Dutch Gouda
  • Butter
  • Olive Oil

Directions

  1. Slice apples and peaches
  2. Saute each fruit (separately) in a pan with olive oil 
  3. Cut 2 or 3 slices of cheese
  4. Butter one side of each sourdough slice
  5. Place cheese and fruit on one sourdough slice (Cheddar & Apples or Gouda & Pears)
  6. Cook both halves on medium heat
  7. Flip empty slice on top of loaded slice
  8. Cook until golden brown and melty!

A mucked up breakfast

I woke up at 2pm because it’s Saturday and it was awesome. No one was around but me, so brunch with Brian it was! I was feeling eggs so I took out some red onion and feta to start my creation. First, I chopped the onions and sautéed them in a pan. After that, my intention was to whisk the eggs to make an omlete or scrambled eggs but that never happened and it was the best mistake ever. 

Instead of actually whisking the eggs I cracked into a bowl, I prematurely poured the eggs in the pan. Oops? It was too late and there was no turning back now. My first thought was that I’ve messed it up and my breakfast is now going to suck but clearly Brian would never let that happen. I proceeded to crumble feta on top of the eggs and just fry the eggs instead (aka wing it) and it came out phenomenal!

Point of the story is that as long as you are using quality fresh ingredients with great flavors, the mindset that you can always solve any problem, and you appreciate that you might learn something new, everything will work out just fine. :D

Chicken Francese

Ingredients

  • 4 boneless, chicken breasts
  • all purpose flour
  • salt and freshly ground pepper
  • 4 eggs
  • 3 tbs of water
  • 1/4 cup evoo
  • 1/2 lemon, slice in thin rounds
  • 1/2 cup drive white wine
  • 1 cup chicken broth
  • 1/2 lemon, juice
  • 2 tbs unsalted butter (or margarine if kosher)
  • 1/4 chopped parsley

Directions

  1. Put chicken breasts side by side on a cutting board and lay plastic wrap over them.
  2. Pound the chicken with a flat meat mallet, until 1/4 inch thick.
  3. Put flour in a shallow platter and season with salt and pepper. Mix evenly with fork.
  4. In a wide bowl, beat eggs with water to make an egg wash.
  5. Heat oil over medium-high flame in a large skillet
  6. Cover both sides of chicken in seasoned flour and then dip in egg wash to coat completely. Let excess drip off.
  7. When oil is nice and hot, add chicken and fryfor 2 mins on each side until golden, turning once. Remove chicken to a large platter to keep warm.
  8. Toss lemon slices in a pan and cook for 2 minutes, until fragrant. Add wine, broth, and lemon juice. Let simmer for 5 minutes to reduce sauce.
  9. Roll butter in flour and add it to skillet to thicken the sauce. Stir completely.
  10. Reduce heat to medium-low and return chicken back to pan, simmer to heat the chicken through. Season with salt, pepper and garnish with choped parlsey right befor serving!

  • ¾ cup Diced Apple
  • ½ tsp Vanilla Extract
  • ½ tsp Baking Powder

  • 1 stick Unsalted Butter (softened to room temp)
  • 1tsp Ground Cinnamon
  • ½ tsp Salt
  • ¼ tsp Ground Ginger
  • ½ tsp Ground Nutmeg
  • 1 cup Fresh Apple Cider
  • ½ cup White Granulated Sugar
  • 4 tbsp Dark Brown Sugar

Ingredients for Baked Apple Chips:

  • White Granulated Sugar
  • Ground Cinnamon
  • Apples
  • Lemon Juice

Turkey, Sausage & Butternut Squash Chili

INGREDIENTS

2 C. butternut squash, diced
1 Tbsp. olive oil
1# ground turkey
1# sausage, without casing (I used spicy chicken sausage)
1 yellow onion, chopped
3 to 4 cloves of garlic, minced
2 (15 oz) cans of diced fire roasted tomatoes
1 (15 oz) can of diced tomatoes
1 (15 oz) can of tomato paste
1 (15 oz) can kidney beans, drained
1 to 1 and ½ C. water
¼ C. chili powder
2 Tbsp. cumin
1 Tbsp. garlic powder
1 Tsp. cayenne pepper
¾ Tsp. salt
